Made it of marinated steak, vegetables, fried potatoes and served over rice
chicharron cusqueño
The Chicharrón in Cusco is actually pieces of fried pork, served with white corn, potatoes, onion, mint, and lemon.
Chiriuchu is a cold meal which literally means in Quechua chili or spicy cold.
cuy al horno
The Cuy al Horno or (roasted guinea pig) is the way it is traditionally served in the Andean region, stuffed with herbs, baked over a spit, and served whole.
Delicious Peruvian classic, slightly spicy and bright yellow from the famous aji amarillo pepper, and rich from the unusual cream sauce made with ground walnuts.
Our Arroz con Pollo is one of the favorite staples of our cuisine. We make it with grainy rice and use cilantro and one special secret ingredient which make the dish super tasty.
